Kale + Apple + Avocado Salad

Apple + Avocado Salad

INGREDIENTS FOR SALAD:

  • 6 stalks curly kale, stems removed
  • 1/2 avocado, diced
  • 1 small green apple, diced
  • 2 TBSP sunflower seeds
  • 1/4 cup onion, finely diced

FOR THE TAHINI-HONEY VINAIGRETTE:

  • 1 heaping TBSP tahini
  • 1/2 TBSP raw honey
  • 1/2 lemon, juiced + zested
  • 1 clove garlic, minced
  • 1/2 tsp cayenne
  • himalayan salt + pepper

 

DIRECTIONS:

Whisk together all of the ingredients for the tahini dressing, and set aside while you put together the salad.

Chop the kale into bite size pieces and toss into a large bowl. Add all of the remaining ingredients, except for the avocado, then pour on the vinaigrette. Using your hands, massage the dressing into each and every bite.

Fold in the avocado pieces, then set in your fridge to allow the flavors to deepen. We love the way kale salads taste after sitting for a few hours, or even overnight. They make great make-ahead meals!
