Brownie Batter Oats

Similar to Sakara, I’m always trying to find new and creative ways to make a plant-based life more enjoyable. If you’ve read my blog you will know that I often make use of light humor and interesting ways to incorporate all the essential nutrients our bodies crave daily. I believe a healthy life can be achieved from the inside out. Brownies for breakfast? Yes. I created this recipe for Sakara Life, because not only will it invigorate your soul with sweet goodness, it also provides a plethora of nutrients. We don’t always have time to wait for our oats to soak, but in this case it’s worth it. Plan this for an early Sunday morning or perhaps the night before work. If you are a runner or exercise in the morning, add your protein powder into the mix.   Brownie Batter Oats Brownie Batter: 2 Bananas, mashed 1 c gluten-free Oats 1 c Almond Milk or Coconut Milk 2 tbsp Cacao Powder 2 tbsp Chia Seeds 1 tbsp Maple Syrup (optional) Cookie Chunks: 1 c Oats 1 c Pecans 2 tbsp Maple Syrup Whipped Topping: ½ c Coconut Milk 2 tbsp White Chia Seeds   Directions:
  1. Mix all batter ingredients in large bowl. Set Aside
  2. Put all ingredients for cookie chunks into food processor, mix on high.
  3. Layer Glass jar or bowl with cookie chunks and brownie batter. Set in fridge to soak for at least 1 hour.
  4. Once soaking your oats is done, remove from fridge. Put coconut milk and chia seeds in blender, mix until smooth.
  5. Layer on top whipped topping and blackberries if you desire.
