Candy Apple Quinoa Salad w/ Peanut-Hemp Seed Dressing
As someone with a raging sweet tooth, it's important for me to satisfy that craving with food that doesn't make me feel like a sloth. I also love recreating favorite recipes from my not so healthy days with wholesome ingredients. Maybe I'm so far gone into this health food addiction of mine that it's the patchouli talking, but I swear this salad tastes like a caramel apple. Sweet and savory/salty is a favorite flavor combination for me, making it pretty tough to complete a salad without some sort of fruit component. If I'm forced to consume salads day in and day out, I'm going to make things a little more exciting, and a little less "health food." How sad is it that exciting to me is adding some dates and apple slices to a bowl of greens? Probably even more sad that I'm writing about it at 10 pm on a Friday night. But seriously don't even think that I want to go out with you on Friday after a long work week. The lies I'll come up with are just about endless, but know this...I'm straight flopping. xx
Candy Apple Quinoa Salad
4 cups mixed baby lettuce
1 cup cooked quinoa
1/2 sweet apple (fuji, pink lady, honeycrisp, etc)
2 medjool dates, pitted and chopped
Peanut + Hemp Seed Dressing
1 tablespoon peanut butter*
1/2 tablespoon honey
juice of 1 lemon
1/2 tablespoon hemp seeds
sea salt, to taste
Whisk together all of the ingredients for the dressing, and set aside while you put together the salad.
Chop up the apple (leaving the skin on), then toss it together with the lettuce, quinoa, and dates. Feel free to throw in some organic peanuts for some extra crunch.
Pour the dressing over top, and mix well. Enjoy!!
*If peanuts aren't your thing, I've also had great success with almond butter. Sunflower seed butter would make a perfect nut-free option as well.
