Recipe: Coconut Watermelon Cocktail

If juicing is all the rage, then watermelon is the new black of the juice world. Here’s the low-down on the oh-so delicious summer fruit: watermelon is made of 92% water, and is an ultra-cooling and tasty way to stay hydrated in this drip-inducing summer heat. Bonus news: watermelon has some powerful anti-aging effects, as it’s high in vitamin C, vitamin A, and lycopene antioxidant. Coconut Watermelon Cocktail

Serves 4

  • 3 cups frozen watermelon chunks
  • 2 cups coconut water
  • 6 oz. Citrus vodka to desired taste
  • Chopped fresh mint

 

DIRECTIONS:

Freeze watermelon chunks overnight. In a blender, add frozen watermelon chunks with coconut water and vodka. Pour in your favorite cocktail glasses, garnish with mint leaves, and enjoy!
