Brain-Boosting Granola
The snack that gives you an extra spark.
This brain-boosting granola will give you the energy you need to feel your best again. Use it to kick off a fulfilling day, or snack on it whenever you need a little spark.
Ingredients:
- 2 1/2 cups rolled oats
- 1/2 cup walnuts, roughly chopped
- 1/2 cup pumpkin seeds
- 1/2 cup unsweetened coconut flakes
- 2 tbsp chia seeds
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup olive oil
- 1/2 cup maple syrup
- 1/2 cup dried blueberries
- 1/2 cup dried cranberries
- 1/3 cup dark chocolate chunks
Directions:
- Heat oven to 325°F. Line a baking sheet with parchment.
- In a large bowl, mix oats, walnuts, pumpkin seeds, coconut, chia, cinnamon, dried blueberries, cranberries, and salt.
- Add olive oil and maple syrup and mix until evenly coated.
- Spread evenly on the baking sheet and press lightly.
- Bake for 30 minutes (until golden), mixing halfway through.
- Cool completely, then fold in and dark chocolate.
Enjoy with coconut yogurt or almond milk.
