Crunchy Roasted Chickpeas

...the humble chickpea transforms into an irresistibly crispy and flavorful bite in our latest snack recipe. Munch by the handful, enjoy on the go, or add as a nutrient-dense topping to your favorite salad. However you savor, these versatile chickpeas are sure to become a snacktime favorite.

INGREDIENTS

  • 1 can of chickpeas
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • Juice from ½ lemon
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika powder
  • 2 tablespoons nutritional yeast

DIRECTIONS

  1. Preheat the oven to 400F.
  2. On a baking sheet lined with parchment paper, toss chickpeas with olive oil, salt, pepper, lemon juice, garlic powder, paprika, and nutritional yeast, ensuring the chickpeas are well coated.
  3. Place in the oven and roast for 25-30 minutes until crispy.
  4. Let cool and enjoy!

TIP: Add a handful to your salad as a nourishing substitute (or addition) to croutons.
