Mediterranean Cucumber Salad Tartine

1 small cucumber, diced
1 radish, diced
1 tomato, diced
¼ cup fresh dill, finely chopped (or 1 tablespoon dried dill)
¼ cup fresh parsley, finely chopped
1 teaspoon apple cider vinegar or lemon juice
1 garlic clove, minced
1 teaspoon olive oil
1 slice gluten-free bread, toasted
2 tablespoons non-dairy probiotic yogurt
Salt + pepper, to taste
- In a bowl, combine cucumber, radish, tomato, dill, parsley, apple cider vinegar, garlic, olive oil, salt, and pepper. Mix well.
