Recipe: Cinnamon-Spiced Pumpkin Granola
Cinnamon-Spiced Pumpkin Granola
(makes about 6 cups)
• 3 cups gluten-free rolled oats
• 1/2 cup pumpkin puree
• 1/4 cup coconut oil
• 1 1/4 cups mixed nuts (walnuts, almonds, cashews, pumpkin seeds, etc)
• 1/4 cup maple syrup
• 2 teaspoons cinnamon
• 1 tablespoon chia seeds
Preheat oven to 350 degrees Fahrenheit
Heat pumpkin puree and coconut oil in a saucepan over low-medium heat. When puree is warm, remove from heat and add in rolled oats until well combined. Mix in remaining ingredients then spread evenly on a baking tray.
Bake in the oven for about 25-30 minutes, making sure to stir the granola evenly every 10 minutes or so. When done baking let granola cool then store in a tight container. Enjoy!
