Make This Now: La Rosa Salvaje with Coconut + Goji
The sun is out late, the temperature is rising, and everything in our bones is telling us to soak up these glorious evenings for every sweet inhale that they're worth. Indulging in drinks and late nights, however, doesn't mean a rejection of all things whole and nourishing from the Earth.
A merging of the nourishing and intoxicating, basic and extravagant, calming and inspiring, is what makes these nights rich and rememberable and our absolute favorite cocktail is just that.
La Rosa Salvaje, or wild rose, combines supercharged goji berries, refreshing mint and lime, and hydrating coconut water. We love to use coconut water extracted directly from a fresh young thai coconut, but a raw organic coconut water also does the trick. Our favorite is Harmless Harvest.
1.5 oz blanco tequila
3 oz. coconut water*
1 oz. goji berry juice
1 oz. freshly squeezed lime juice
Mint leaves (for muddling)
Dried goji berries
Pour coconut water, goji berry juice, lime juice, tequila, and ice in a cocktail shaker and shake until well blended.
Strain mixture into a glass and set aside.
Muddle fresh mint in a glass (or a coconut!) and add the cocktail.
Garnish with extra limes, dried goji berries, and rose petals.
Sip up, enjoy!
