Vegan + Gluten-Free + LOVE filled Pumpkin Pie

Is there anything that SCREAMS fall, thanksgiving, holiday, celebration, and full body+soul nourishment quite as loudly as pumpkin pie does?!


Yeah, we didn't think so.


The pumpkin historically symbolizes the earth, with its strong, round, sturdy shape containing each and every essence of our magical world inside of it. It reminds us of the abundance we have in our lives, the wonder that our worlds are filled with, and the powerfully grandiose size of this very mystical universe we are a part of. No wonder it is the centerpiece of our celebration of gratitude.


Our Sakara-Style pumpkin pie recipe comes donning a superfood filled ingredient list that is going to delight your tastebuds and adore your body.


First we start with the crust.





    • 1 cup raw macadamia nuts


    • 1 ¾ cup shredded coconut


    • 1 teaspoon vanilla extract


    • 1/2 teaspoon Himalayan Pink Salt


    • 3 tablespoons coconut nectar


    • 2 tablespoons coconut oil


    • 3 tablespoons chickpea flour


Preheat the oven to 325F. Blend macadamia nuts, shredded coconut, vanilla, coconut nectar, coconut oil, and salt on high until ingredients are well combined throughout. Pour contents into a mixing bowl, add chickpea flour, and stir until mixture is consistent throughout and contents are crumbly and moist. Press mixture into a well-oiled pie pan – we use coconut oil! - and bake at 325F for 15 minutes. Remove from oven, set aside, and allow to cool fully!


Now let’s get to that ooey gooey filling.





    • 2 cups baked pumpkin or 1 can (15oz) pumpkin puree


    • 1 (13.5oz) can full-fat coconut milk


    • 1/4 cup gluten-free oats


    • 2 tbsp ground flax seed


    • 1 teaspoon grated ginger root


    • 1 teaspoon Maca


    • 1/3 cup coconut sugar


    • 2 tbsp extra brown sugar


    • 2 tsp cinnamon


    • 1 tsp pumpkin pie spice


    • 1/2 tsp Himalayan Sea Salt salt


    • 1 tbsp pure vanilla extract or 1 whole vanilla bean


Crank the oven up to 400F. Blend all fillinf ingredients together until smooth, then pour into your cooled pie crust. Bake 27 minutes and let cool. Place pie in refrigerator and allow to cool uncovered for 5 hours in order for pie to thicken and set.
