Cleansing this week but longing for a little something sweet? Don't worry, Sakaralite, we have the perfect weekend treat to satisfy your dessert cravings, while still allowing your body to
cleanse and heal! Plus, it doesn't hurt that it's insanely easy to put together...
• 2 cups organic frozen raspberry + blackberry mix
• 1 cup organic frozen strawberries
• 1/2 cup black chia seeds
• 1/2 cup organic no sugar added apple puree
• 1 organic banana
• 6 tablespoons chilled coconut oil
• 1 1/4 cup gluten-free flour
• 1/4 teaspoon salt
• 4-6 tablespoons ice cold water
Mix flour and salt in a mixing bowl and whisk to combine. Gently work in the chilled coconut oil (can cut up into smaller pieces so it's easier to work with). Once the coconut oil is incorporated with the flour mixture, add ice cold water a little bit at a time. Only use as much water as you need to help the dough come together.
Once dough is ready, move to a flat surface with plastic wrap and gently work with it until it forms a 1/2 inch thick disc. Wrap firmly with the plastic wrap and let it chill in the refrigerator for a minimum of 30 minutes (maximum of 2 days).
Once the crust is ready to be worked with again, unwrap the plastic wrap (or wax paper) and place on a flat surface. Roll it out a bit to get the edges smooth, then gently transfer it to your pie dish. Bake in a 350 degree oven for about 15 minutes, then take out and let cool.
In a pot on the stove add mixed berries, strawberries, and apple puree and bring to a simmer, stirring occasionally.
Add 1/2 cup of black chia seeds to pot, reduce the flame, and let the ingredients slowly cook for the next 15 minutes. Once 15 minutes are done, remove from heat and allow to rest for another 15 minutes.
In a 350 degree oven roast one banana (in its skin) for 10 minutes. Once it's done roasting, remove from oven and carefully take out from the peel. Let cool.
Slice up banana into quarter inch think slices and place in pie shell center. Lay them out so that entire bottom layer of crust is covered with a thin layer of banana slices. Give the berry chia mixture another stir with a spoon, then finish off the pie by ladling the mixture over the bananas until it reaches towards the top of crust. Once the berry chia mix is evenly spread out over the pie crust, it should be ready to eat!
