Best Friend Cupcakes
Love, Sex and Companionship month is about nurturing all of the important relationships in your life and that includes your best friends. Surprise your bff with these cupcakes that will say to her 'Hey girl, I love you. Thanks for listening to me when I need a shoulder to cry on, for letting me borrow that super cute dress, for always telling me when I have spinach in my teeth, for splitting that cheese pizza with me so I wouldn't eat the whole thing alone and lastly for being my gal pal, my ride or die, my sister from another mister. I wouldn't be who I am without you by my side.' Or, you know, something along those lines...
2. cups gluten free flour
4 tsp corn starch
1 tsp baking powder
1/2 tsp baking soda
3/4 tsp sea salt
1 cup coconut sugar
1/2 cup refined coconut oil, melted ( not hot)
1/2 tsp pure vanilla extract
1 1/2 tsp pure almond extract
1 1/2 cup coconut milk
1 1/2 tbsp apple cider vinegar
Preheat the over to 350.
In a small bowl, combine the coconut milk and apple cider vinegar. Let sit for 15 minutes.
Combine flour, corn starch, salt, baking powder and baking soda into a separate bowl.
In a larger bowl, combine oil, sugar and both vanilla and almond extract.
Once the coconut milk mixture has set for 15 minutes, pour about half of coconut milk mixture and half of dry ingredients into the larger bowl. Begin to whisk and slowly while adding in the remaining ingredients. Bake for 15 minutes, or until golden-brown (if you stick a toothpick in, no batter should come out!)
1 can full fat coconut milk, refrigerated overnight
1/4 cup coconut sugar
1/2 tsp pure almond extract
Combine the thickened coconut milk with coconut sugar and almond extract and whisk until creamy! Frost cupcakes when cool and decorate with lots and lots of gorgeous edible flowers. Finally, deliver to best friend.
