Recipe! 15 Minute Almond Butter Blueberry Oatmeal Cookies

Short on time? Big on a sweet tooth? All you need in 15 minutes to mix these incredibly sweet and satisfying babies together, pop them in the oven and voilà -- body-loving cookies in less time than Tollhouse!

Almond Butter Blueberry Oatmeal Cookies

Yields 12-14 three-inch cookies

  • 1/4 cup organic almond butter at soft room temperature
  • 1 banana, ripe + spotty 
  • 1 1/2 cups gluten free rolled oats
  • 1/4 cup blueberries *
  • pinch himalayan salt
  • pinch cinnamon powder

Preheat oven to 350 F. Mash the ripe banana in a medium bowl. Mix in almond butter, then oats, blueberries and Himalayan salt. Combine well until a dough forms. Use 2 spoons to form a small dough ball, and drop onto a parchment-lined baking pan. Slightly flatten cookies using a fork. Bake for 8-10 minutes, or until golden brown and ooey gooey. Enjoy them warm or at room temperature! Glass of cold almond milk optional.

* Other fruits of your choice can be used to replace blueberries! Raisins are a great addition, too.
