Herby Salad with Paprika + Tahini Ranch
A SIMPLE YET COLORFUL SALAD GETS UPLEVELED THANKS TO A SWEET AND SPICY CRUNCH
A pared-down salad at home can still pack a flavorful punch; these paprika and maple dusted nuts and seeds will electrify your lunch with healthy fats and a sweet-and-spicy twist. Drizzle on the decadent tahini ranch, and your lunch is bound to feel special.
- 2 cups leafy greens
- 1 radish, sliced
- ½ avocado, sliced
- ½ cucumber, sliced
- 1 carrot, shredded
- Packet of Adaptogenic Superseed + Nut Blend
- Juice from 1 lemon
- 1-2 tablespoons tahini
- 1 tablespoon olive oil
- 1 garlic clove, diced
- ⅓ cup of water
- ⅓ cup fresh chopped herbs (suggested: parsley, chives, and dill)
- Salt + pepper to taste
- In a bowl place tahini, lemon juice, herbs, ⅓ cup of water, garlic, and 1 tablespoon of olive oil and whisk until smooth. Season with salt + pepper to taste.
- Place leafy greens, avocado, cucumber, and radish in a bowl, dress with Tahini dressing, and top with Adaptogenic Superseed + Nut Blend.
