For optimal crunch and even more plant-rich love, top the creamy coconut yogurt and hydrating berry breakfast with Endless Summer Granola, the ultimate client-favorite and limited-edition snack for the season. While there are flavor notes of strawberry and vanilla, folded in the granola recipe is beet, which provides the unmistakable hot pink hue, but also important nutrients like liver-detoxifying betalain. Gorgeous, in all ways. 

Ingredients:

  • 2 tablespoons chia seeds
  • 2 tablespoons flax seed
  • 2 tablespoons hemp seed
  • 1.5 cup plant-based milk (suggested: Pink Mylk)
  • 1 teaspoon vanilla extract
  • ¼ cup organic coconut yogurt
  • Handful of strawberries + raspberries, sliced
  • cup of Endless Summer Granola
  • 1 tablespoon goji berries
  • Optional: almond butter for topping

 

Directions:

  1. In a bowl, whisk together chia, flax, and hemp seeds with milk + vanilla and cover. Place in the fridge and refrigerate for at least 1 hour.
  2. In a cup or bowl, place a layer of granola, followed by chia, coconut yogurt, fruit and repeat the process until you the cup in full. Top with goji berries, almond butter, or more fresh fruit.
